Almond Butter Nutri-Brex Chocolate Bites
Not only do these truffle like bites taste great they also pack a punch on the nutrients making these a great treat when you want something sweet. Created by Ceri Jones from Natural Kitchen Adventures for Nutri-Brex as part of the launch for their new product, Coconut & crispy rice Nutri-Brex.
Almond butter is a great addition to any recipe (make sure that you use one that contains just nuts and has no added salt.) due to its lack of carbs and abundance of protein and healthy fat. Its also a very good source of fibre. Dates are also used in this recipe which are rich in many vital nutrients promoting brain, heart and digestive health. When I made these I used raw cacao in place of cocoa powder to add extra antioxidants into the mix but cocoa powder works perfect.
4 coconut & crispy rice Nutri-Brex
12 medjool dates
4 tbsp (60ml) almond butter
2 tbsp cocoa powder
1 tsp almond extract
Desiccated coconut, whole or blitz cacao nibs to roll.
- Place the Nutri-Brex in a food processor, and blitz till broken down, remove and set aside.
- Place the dates in the processor and blitz till broken down to a sticky lump. Add the Nutri-Brex back in, along with the almond butter, cocoa powder and optional almond extract and blitz again until it all comes together.
- Roll the mixture into small balls and then roll in cacao nibs or desiccated coconut. Chill in the fridge for at least 30 minutes before serving.
